Ingredients

Base Ingredients

  • 1 ½ cup oats
  • 1 ½ cup crispy rice cereal
  • ¾ cup sliced almonds
  • 10 tablespoons maple syrup
  • 10 tablespoons almond butter
  • 1 ½ teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • ¾ cup dairy free chocolate chips

Optional Add-Ins

  • 1 cup dried fruit (e.g., blueberries, cherries, or pineapple)
  • 1 cup shredded coconut
  • 1 cup chopped nuts (e.g., pecans, pistachios, or walnuts)
  • 1 cup sunflower or pumpkin seeds
  • 1 teaspoon cinnamon or pumpkin spice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place the oats, rice cereal, and sliced almonds on a parchment-lined baking sheet and bake for 5-7 minutes until lightly browned.
  3. In a bowl, mix the almond butter, maple syrup, vanilla extract, and sea salt until smooth.
  4. Add the oat mixture and dairy-free chocolate chips to the bowl and mix well.
  5. Transfer the mixture to a square pan lined with parchment paper and press down firmly.
  6. Refrigerate for at least 2 hours until hardened.
  7. Remove from the pan and cut into bars.
