Instructions
- Preheat the oven to 350 degrees and grease a 9 x 13 inch pan.
- In a small bowl, mix the flour, cinnamon, baking powder, and salt.
- In a large bowl, combine the coconut oil, maple syrup, egg, and vanilla.
- Stir in the flour mixture until well combined.
- Add the oats, coconut, nuts, and dried fruit, mixing until evenly distributed.
- Press the mixture into the prepared pan.
- Bake for 20 to 25 minutes until the edges are brown.
- Cool completely on a wire rack before cutting into 14 bars.
- Store the bars in an airtight container.
