Ingredients

The base

  • 1 cup white whole wheat flour
  • ½ tsp baking powder
  • tsp ginger
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt

The wet ingredients

  • cup melted coconut oil or butter
  • cup maple syrup
  • 2 large eggs
  • 1 tsp vanilla extract

The mix-ins

  • 2 cups rolled oats
  • ½ cup finely chopped walnuts
  • ½ cup finely chopped almonds
  • 1 cup raisins

Instructions

  1. Preheat the oven to 350°F and grease a 9x13 inch pan.
  2. In a small bowl, combine the flour, baking powder, ginger, cinnamon, nutmeg, and salt.
  3. In a large bowl, mix together the coconut oil, maple syrup, eggs, and vanilla.
  4. Stir in the flour mixture until combined.
  5. Add the oats, nuts, and raisins, and stir to combine evenly.
  6. Press the dough evenly into the prepared pan.
  7. Bake for 25 to 30 minutes until the edges are beginning to brown.
  8. Cool completely on a wire rack before cutting into bars.
