Instructions
- Preheat the oven to 275°F.
- In a large bowl, combine the oats, brown rice cereal, almonds, pecans, and chia seeds.
- In a small bowl, mix together the ginger, cinnamon, nutmeg, and salt, then add to the large bowl.
- In another small bowl, combine the melted coconut oil (or butter), maple syrup, and vanilla extract, then pour over the dry ingredients and mix well.
- Transfer the mixture to a 9x13 inch baking dish, pressing down to form an even layer.
- Bake for about 1 hour until the granola is solid to the touch.
- Allow the granola to cool completely before breaking it apart.
- Stir in the raisins and store in an airtight container.
