Ingredients

The base

  • 2 cups rolled oats
  • 2 cups brown rice crisp cereal
  • ½ cup diced almonds
  • ½ cup diced pecans
  • 2 tablespoons chia seeds

The spices

  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt

The binding ingredients

  • ½ cup melted coconut oil or butter
  • cup maple syrup
  • 1 teaspoon vanilla extract

The mix-ins

  • cups raisins

Instructions

  1. Preheat the oven to 275°F.
  2. In a large bowl, combine the oats, brown rice cereal, almonds, pecans, and chia seeds.
  3. In a small bowl, mix together the ginger, cinnamon, nutmeg, and salt, then add to the large bowl.
  4. In another small bowl, combine the melted coconut oil (or butter), maple syrup, and vanilla extract, then pour over the dry ingredients and mix well.
  5. Transfer the mixture to a 9x13 inch baking dish, pressing down to form an even layer.
  6. Bake for about 1 hour until the granola is solid to the touch.
  7. Allow the granola to cool completely before breaking it apart.
  8. Stir in the raisins and store in an airtight container.
