Gingerbread Granola

Ingredients

Dry Ingredients

  • 3 ¼ cups rolled oats
  • 1 ¾ cups raw nuts (almonds, pecans, walnuts)
  • 3 Tbsp organic cane sugar
  • ¼ tsp sea salt
  • ½ Tbsp ground cinnamon
  • ¾ tsp ground ginger
  • 1 pinch ground cloves (optional)

Wet Ingredients

  • ¼ cup coconut or olive oil
  • cup maple syrup
  • 2 Tbsp molasses
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat the oven to 325°F (162°C).
  2. Mix the dry ingredients in a large bowl.
  3. In a small saucepan over medium-low heat, warm the coconut oil, maple syrup, molasses, and optional vanilla extract.
  4. Pour the warm mixture over the dry ingredients and mix well.
  5. Spread the mixture evenly on a large baking sheet.
  6. Bake for 18–22 minutes, stirring halfway through to ensure even cooking.
  7. Once browned, remove from the oven and let cool completely on the pan before storing.
