Ingredients

The base

  • 1 cup pitted dates
  • ½ cup dried apricots
  • ¼ cup agave nectar
  • cup sunflower butter
  • ½ teaspoon cinnamon

The mix-ins

  • ¾ cup roughly chopped roasted cashews
  • ½ cup coconut flakes
  • 1 ½ cups quick oats

Instructions

  1. Chop the dates and apricots in a food processor.
  2. Add the agave, sunflower butter, and cinnamon, and process until well combined.
  3. Transfer the mixture to a bowl and stir in the cashews, coconut flakes, and oats until combined.
  4. Line a loaf pan with parchment paper and press the mixture firmly into the pan.
  5. Chill in the fridge for one hour.
  6. Slice into 8 to 10 bars and enjoy.
