Homemade Granola Bars

Ingredients

The base

  • 1 cup natural peanut or cashew butter
  • cup honey
  • 1 teaspoon vanilla extract
  • heaping ½ teaspoon sea salt

The mix-ins

  • cups whole rolled oats
  • cup mini chocolate chips
  • 3 tablespoons pepitas or crushed peanuts or cashews

Instructions

  1. Line an 8x8 baking pan with parchment paper.
  2. In a large bowl, mix the peanut butter, honey, vanilla, and salt until smooth.
  3. Add the oats, chocolate chips, and pepitas (or nuts) to the mixture and stir until fully combined.
  4. Press the mixture firmly into the lined pan, smoothing the top with a measuring cup.
  5. Chill in the fridge for at least 1 hour before slicing into bars.
  6. Store the bars in the fridge.
