Homemade Granola Bars

The mix-ins

whole rolled oats

mini chocolate chips

pepitas or crushed peanuts or cashews
Instructions
- Line an 8x8 baking pan with parchment paper.
- In a large bowl, mix the peanut butter, honey, vanilla, and salt until smooth.
- Add the oats, chocolate chips, and pepitas (or nuts) to the mixture and stir until fully combined.
- Press the mixture firmly into the lined pan, smoothing the top with a measuring cup.
- Chill in the fridge for at least 1 hour before slicing into bars.
- Store the bars in the fridge.
