Chewy Peanut Butter Granola Bars

Instructions
- Line an 8x8-inch or 9x9-inch baking pan with parchment paper.
- In a medium saucepan, combine the peanut butter, honey, and coconut oil, and heat over medium until it simmers.
- Simmer for 1 minute, stirring often to prevent burning, then remove from heat.
- Stir in the vanilla and sea salt until combined.
- Add the oats and almonds, stirring until fully mixed. If desired, chill for 15 minutes before adding chocolate chips to keep them from melting.
- Press the mixture firmly into the prepared pan, using a measuring cup to flatten it evenly.
- Cover and refrigerate for about an hour until chilled.
- Lift the bars out using the parchment paper, cut into desired shapes, and serve.
