Microwave Chewy Peanut Butter Granola Bars

chunky peanut butter (or ¾ cup creamy peanut butter)

Instructions
- Line an 8 by 8-inch baking dish with aluminum foil, leaving a 2-inch overhang.
- In a large mixing bowl, combine oats and Rice Krispies, and set aside.
- In a separate microwave-safe bowl, mix peanut butter, honey, brown sugar, and salt.
- Heat the mixture in the microwave on HIGH for 1 minute, stir, then heat for another minute.
- Remove from the microwave, add vanilla, and whisk for 30 seconds.
- Pour the peanut butter mixture over the oat mixture and toss to coat evenly.
- Transfer the mixture to the prepared baking dish and press it into an even layer.
- Cover with plastic wrap and freeze for 10-15 minutes or chill in the refrigerator for 30 minutes.
- Lift the bars from the dish using the foil overhang and cut into squares.
- Store in an airtight container.
