Microwave Chewy Chocolate Chip Granola Bars

Instructions
- Heat coconut oil or unsalted butter, brown sugar, and honey in a microwave-safe bowl for 1 minute.
- Stir the mixture and heat for an additional minute if using coconut oil, or 1½ minutes if using butter.
- Blend in vanilla, then add quick oats and stir until evenly coated.
- Fold in Rice Krispies and mix well.
- Firmly press the mixture into a greased baking dish and sprinkle with chocolate chips, pressing them in.
- Chill in the freezer for 10 minutes, then cut into 9 bars.
