Ingredients

  • ¾ cup Biscoff Spread
  • 2 Tablespoons coconut oil
  • cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 3 cups old-fashioned whole rolled oats
  • ¼ cup packed light brown sugar
  • ¾ teaspoon salt
  • cup mini chocolate chips

Instructions

  1. 1. Preheat the oven to 350°F (177°C) and prepare an 8-inch square baking pan with nonstick spray.
  2. 2. Melt the Biscoff Spread and coconut oil in the microwave until smooth and combined.
  3. 3. In a large bowl, mix the melted mixture with honey (or maple syrup), egg, and vanilla until well combined.
  4. 4. Stir in the oats, brown sugar, and salt until mixed thoroughly, then fold in the chocolate chips.
  5. 5. Transfer the mixture to the prepared baking pan and press it down evenly.
  6. 6. Bake for 21-24 minutes until set and the edges are lightly browned.
  7. 7. Allow to cool completely before cutting into squares.
