Ingredients

The base

  • 1 cup old-fashioned whole rolled oats
  • cup whole wheat flour (or almond meal)
  • teaspoons ground cinnamon
  • ¼ teaspoon salt
  • ¼ cup coconut oil, melted
  • ¼ cup nut butter (e.g., peanut butter)
  • ¼ cup honey
  • ¼ cup coconut sugar (or packed light/dark brown sugar)
  • 2 teaspoons pure vanilla extract
  • ¾ cup raisins

Optional add-ins

  • ¾ cup chopped nuts

Instructions

  1. Preheat the oven to 325°F (163°C) and line an 8-inch square baking pan with parchment paper.
  2. Mix all ingredients together in a bowl until combined.
  3. Transfer the mixture to the prepared baking pan and press firmly into an even layer.
  4. Bake for 25-28 minutes until the top is set and golden brown around the edges.
  5. Allow to cool completely in the pan for 1 hour, then refrigerate for 1 more hour to firm up.
  6. Remove from the pan using the parchment overhang and cut into bars.
  7. Store tightly covered at room temperature for 1 week or in the refrigerator for up to 2 weeks.
