Ingredients

The base

  • 1 cup oat flour or finely ground oats
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • 2 tbsp unsalted butter
  • ½ cup brown sugar
  • 1 large egg
  • ¼ cup honey
  • ¼ cup unsweetened apple sauce
  • ½ tsp vanilla extract
  • 2 cups quick oats

The mix-ins

  • ½ cup dark chocolate chips
  • ½ cup raisins
  • ½ cup chopped pecans

Instructions

  1. Preheat the oven to 350°F.
  2. Line a 9x9 baking pan with parchment paper and lightly spray with oil.
  3. In a medium bowl, whisk together the oat flour, baking powder, baking soda, salt, and cinnamon.
  4. In a large bowl, cream together the butter and brown sugar using a mixer.
  5. Add the egg, honey, apple sauce, and vanilla extract to the mixture.
  6. Stir in the flour mixture and oats until just combined, then add the chocolate chips, raisins, and pecans.
  7. Spoon the mixture into the prepared baking dish and flatten it evenly.
  8. Bake for 23-25 minutes until light brown at the edges.
  9. Allow to cool completely on a wire rack, then refrigerate before cutting into bars.
