Ingredients

The bars

  • 2 cups old-fashioned oats
  • 1 cup chopped almonds
  • ½ cup Dutch-process or dark cocoa powder
  • ½ cup almond flour
  • ¾ cup sweetened or unsweetened shredded coconut
  • 1 cup semisweet or bittersweet chocolate chips

The syrup

  • ½ cup coconut oil, melted
  • ¼ cup brown sugar
  • ¼ cup honey
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and line a 9x13-inch pan with parchment paper.
  2. In a medium bowl, mix the oats, almonds, cocoa, almond flour, and coconut.
  3. In another bowl, whisk together the coconut oil, brown sugar, honey, salt, and vanilla.
  4. Combine the syrup mixture with the dry ingredients and stir until evenly mixed, then add the chocolate chips.
  5. Press the mixture into the prepared pan evenly without over-compressing.
  6. Bake for 20-25 minutes, adjusting time for desired softness or crunchiness.
  7. Allow to cool before cutting into bars.
