Ingredients

  • 1 cup packed dates (pitted)
  • ¼ cup honey (or maple syrup/agave for vegan option)
  • ¼ cup almond butter
  • ¾ cup raw nuts (such as pecans and almonds)
  • cups rolled oats
  • ¼ cup semisweet or dark chocolate chips

Instructions

  1. Optionally, toast the oats in a 350°F (176°C) oven for 15 minutes.
  2. Process the dates in a food processor until they form a ball with small bits remaining.
  3. In a large mixing bowl, combine the processed dates with oats, nuts, and chocolate chips, breaking down the dates as needed.
  4. Warm the honey and almond butter in a saucepan, then pour over the dry ingredients and mix well.
  5. Transfer the mixture to a lined shallow pan, pressing it down firmly to form a tight square.
  6. Cover and freeze for 15 minutes to set.
  7. Cut into 10 bars and store in an airtight container in the fridge or freezer.
