Nut Butter Granola Bars

Ingredients

  • 2 cups raw nuts (such as almonds, walnuts, pistachios, pecans, and/or blanched hazelnuts)
  • ½ cup raw pumpkin seeds
  • 3 Tbsp. extra-virgin olive oil, plus more for pan
  • 2 cups old-fashioned oats, divided
  • cups dried fruit (such as tart cherries, raisins, currants, dates, apricots, and/or blueberries)
  • ¾ cup natural peanut butter (unsalted or low-salt)
  • ½ cup honey
  • 2 Tbsp. honey
  • 2 tsp. kosher salt
  • 2 tsp. vanilla extract
  • 1 large egg white

Instructions

  1. Preheat the oven to 350°F and roast the nuts and pumpkin seeds for 10-12 minutes.
  2. Lower the oven temperature to 300°F and prepare a baking pan with oil and parchment paper.
  3. Pulse 1 cup of oats with the nut mixture until finely ground, then transfer to a bowl.
  4. Chop any large dried fruit and mix it with the nut mixture, along with the remaining oats and oil.
  5. In a saucepan, bring honey, salt, and vanilla to a boil, then simmer until caramel-like.
  6. Pour the honey mixture over the peanut butter and stir until combined.
  7. Whisk the egg white and mix it into the oat mixture until fully incorporated.
  8. Press the mixture into the prepared pan evenly.
  9. Bake for 30-35 minutes until golden brown, then let cool and score into bars.
  10. Cool completely before cutting into bars.
