Nut Butter Granola Bars

dried fruit (such as tart cherries, raisins, currants, dates, apricots, and/or blueberries)

Instructions
- Preheat the oven to 350°F and roast the nuts and pumpkin seeds for 10-12 minutes.
- Lower the oven temperature to 300°F and prepare a baking pan with oil and parchment paper.
- Pulse 1 cup of oats with the nut mixture until finely ground, then transfer to a bowl.
- Chop any large dried fruit and mix it with the nut mixture, along with the remaining oats and oil.
- In a saucepan, bring honey, salt, and vanilla to a boil, then simmer until caramel-like.
- Pour the honey mixture over the peanut butter and stir until combined.
- Whisk the egg white and mix it into the oat mixture until fully incorporated.
- Press the mixture into the prepared pan evenly.
- Bake for 30-35 minutes until golden brown, then let cool and score into bars.
- Cool completely before cutting into bars.
