Ingredients

The base

  • 1 ¾ cups quick-cooking oats
  • 1 ⅓ cups sliced almonds
  • cup mini dark chocolate chips
  • 1 teaspoon ground cinnamon
  • ½ to ¾ teaspoon salt

The wet ingredients

  • 1 cup creamy unsalted almond butter or peanut butter
  • ½ cup honey
  • 1 ½ teaspoons vanilla extract

Instructions

  1. Line an 8 to 9-inch square baking dish with criss-crossed parchment paper.
  2. In a mixing bowl, combine oats, almonds, chocolate chips, cinnamon, and salt, and whisk together.
  3. In a measuring cup, mix almond butter, honey, and vanilla extract until well blended. Optionally warm the mixture slightly.
  4. Pour the liquid ingredients into the dry ingredients and mix until combined, adding more oats if the mixture is too wet.
  5. Transfer the mixture to the prepared baking dish and press it down firmly to create an even layer.
  6. Cover and refrigerate for at least one hour or overnight before cutting into bars.
