Instructions
- Prepare an 8x8 inch baking pan with parchment paper.
- In a saucepan, combine butter, brown sugar, honey, and Biscoff Spread over medium-low heat until bubbling, then cook for 2 minutes while stirring.
- Remove from heat and stir in vanilla extract.
- Mix in oats, crispy rice cereal, and chopped Biscoff Cookies until well coated.
- Pour the mixture into the prepared pan and press evenly.
- Sprinkle mini chocolate chips on top and gently press them in.
- Refrigerate for at least 30 minutes before cutting into bars.
