Ingredients

The base

  • 2 cups old-fashioned rolled oats
  • ½ cup gluten-free 1:1 flour
  • ½ cup crispy rice cereal
  • 1 tablespoon flax meal
  • ½ teaspoon baking powder
  • ¼ teaspoon fine salt

The wet ingredients

  • ¼ cup melted butter
  • cup honey
  • cup mashed banana
  • 1 teaspoon pure vanilla extract

The mix-ins

  • 1 ounce graham crackers
  • ½ cup mini marshmallows
  • ¼ cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F and line an 8x8-inch baking pan with parchment paper.
  2. In a medium bowl, mix the oats, flour, cereal, flax meal, baking powder, and salt.
  3. Make a well in the center and add the melted butter, honey, banana, and vanilla, then stir to combine.
  4. Fold in the graham cracker pieces, marshmallows, and chocolate chips.
  5. Transfer the mixture to the prepared pan and press it firmly into the pan.
  6. Bake for 18-20 minutes until puffed and lightly golden brown.
  7. Cool completely on a wire rack for about 1 hour before slicing into bars.
