Ingredients

The crust

  • 1 cup gluten-free rolled oats
  • ½ cup raw almonds
  • ¼ tsp sea salt
  • 3 Tbsp coconut sugar
  • 5 Tbsp coconut oil (melted)
  • ½ cup raw pecans (finely chopped)

The chocolate layer

  • cup dairy-free dark or semisweet chocolate (chopped)
  • cup unsweetened plain almond or light coconut milk
  • 2 Tbsp coconut oil (melted)
  • ¼-1 cup powdered sugar (optional)
  • 1 pinch sea salt (optional)

The marshmallows

  • 1 10-ounce bag vegan, gluten-free marshmallows

Instructions

  1. Preheat the oven to 350°F (176°C) and line an 8x8 inch baking dish with parchment paper.
  2. Blend oats, almonds, sea salt, and coconut sugar until fine.
  3. Add melted coconut oil and pulse to combine until it forms a loose dough.
  4. Add chopped pecans and pulse a few more times to combine.
  5. Spread the mixture in the baking dish and press down firmly.
  6. Bake for 15 minutes, then increase the temperature to 375°F (190°C) and bake for an additional 5-10 minutes until golden brown.
  7. Cool the crust slightly while preparing the chocolate layer.
  8. In a bowl, combine chocolate and almond milk, microwaving until almost boiling, then let sit for 5 minutes.
  9. Stir in melted coconut oil and mix until combined.
  10. Spread the ganache over the cooled crust and freeze until set.
  11. Top with halved marshmallows and broil for 30-45 seconds until toasted.
  12. Cut into 9 bars and serve immediately.
