The marshmallows

vegan, gluten-free marshmallows
Instructions
- Preheat the oven to 350°F (176°C) and line an 8x8 inch baking dish with parchment paper.
- Blend oats, almonds, sea salt, and coconut sugar until fine.
- Add melted coconut oil and pulse to combine until it forms a loose dough.
- Add chopped pecans and pulse a few more times to combine.
- Spread the mixture in the baking dish and press down firmly.
- Bake for 15 minutes, then increase the temperature to 375°F (190°C) and bake for an additional 5-10 minutes until golden brown.
- Cool the crust slightly while preparing the chocolate layer.
- In a bowl, combine chocolate and almond milk, microwaving until almost boiling, then let sit for 5 minutes.
- Stir in melted coconut oil and mix until combined.
- Spread the ganache over the cooled crust and freeze until set.
- Top with halved marshmallows and broil for 30-45 seconds until toasted.
- Cut into 9 bars and serve immediately.
