The filling

Instructions
- Preheat the oven to 300ºF.
- Combine the dry ingredients in a food processor and pulse to mix.
- In a separate bowl, whisk together honey, vanilla, and almond milk, then add to the dry ingredients and process until a dough forms.
- Roll the dough between two sheets of parchment paper to about 1/8-inch thick and score into 2-inch squares.
- Poke holes in each square to prevent puffing during baking.
- Bake for 8-10 minutes until lightly browned on the edges.
- Turn off the oven and let the crackers cool inside for 20-30 minutes.
- Once cooled, break the crackers apart along the score lines.
- To assemble s'mores, place chocolate on a cracker, add a toasted marshmallow, and top with another cracker.
