Ingredients

The graham crackers

  • 1 ¼ cup finely-ground almond flour
  • ¼ cup arrowroot starch
  • ¾ tsp Vital Proteins Gelatin
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp sea salt
  • ¼ tsp ground cinnamon
  • 3 Tbsp honey
  • ½ tsp vanilla
  • 2 tsp almond milk

The filling

  • 10–12 marshmallows
  • 10–12 squares chocolate (milk or dark)
  • Optional: Nut butter, fresh berries, toasted coconut flakes

Instructions

  1. Preheat the oven to 300ºF.
  2. Combine the dry ingredients in a food processor and pulse to mix.
  3. In a separate bowl, whisk together honey, vanilla, and almond milk, then add to the dry ingredients and process until a dough forms.
  4. Roll the dough between two sheets of parchment paper to about 1/8-inch thick and score into 2-inch squares.
  5. Poke holes in each square to prevent puffing during baking.
  6. Bake for 8-10 minutes until lightly browned on the edges.
  7. Turn off the oven and let the crackers cool inside for 20-30 minutes.
  8. Once cooled, break the crackers apart along the score lines.
  9. To assemble s'mores, place chocolate on a cracker, add a toasted marshmallow, and top with another cracker.
