Ingredients

The base

  • 1.5 cups all-natural creamy peanut butter
  • 1 cup honey
  • 2 tablespoons coconut oil
  • 1 teaspoon pure vanilla extract

The oats

  • 2 cups rolled oats
  • 1.5 cups quick cooking oats

The mix-ins

  • ½ cup mini chocolate chips
  • ½ cup chopped peanuts
  • to taste flaky sea salt (for garnish)

Instructions

  1. Line a 9x9-inch pan with parchment paper and lightly spray it with non-stick baking spray.
  2. In a large microwave-safe bowl, combine peanut butter, honey, and coconut oil. Microwave for 1 minute and stir until smooth.
  3. Add vanilla extract to the mixture and stir to combine.
  4. Fold in the rolled oats and quick cooking oats until they are evenly coated.
  5. Incorporate half of the chocolate chips and peanuts into the mixture.
  6. Transfer the mixture to the prepared pan and spread it evenly with a spatula. Sprinkle the remaining chocolate chips and peanuts on top.
  7. Cover with parchment paper and press the mixture tightly into the pan.
  8. Chill in the fridge for at least 2 hours until set.
  9. Remove from the pan, slice into bars, and enjoy.
