Peanut Butter Granola Bars

Instructions
- Line a 9x9-inch pan with parchment paper and lightly spray it with non-stick baking spray.
- In a large microwave-safe bowl, combine peanut butter, honey, and coconut oil. Microwave for 1 minute and stir until smooth.
- Add vanilla extract to the mixture and stir to combine.
- Fold in the rolled oats and quick cooking oats until they are evenly coated.
- Incorporate half of the chocolate chips and peanuts into the mixture.
- Transfer the mixture to the prepared pan and spread it evenly with a spatula. Sprinkle the remaining chocolate chips and peanuts on top.
- Cover with parchment paper and press the mixture tightly into the pan.
- Chill in the fridge for at least 2 hours until set.
- Remove from the pan, slice into bars, and enjoy.
