Instructions
- 1. Line an 8x8 square dish with parchment paper, greasing the inside first.
- 2. In a medium/large pot over low heat, mix together the peanut butter, honey, and vanilla extract until combined.
- 3. Remove from heat and stir in the rolled oats and coconut, ensuring they are well coated.
- 4. Let the mixture cool for about 10 minutes, then stir in the peanut butter cup pieces.
- 5. Transfer the mixture to the baking dish and press it down firmly to pack it in.
- 6. Cover the dish and refrigerate overnight or freeze for 45 minutes if short on time.
- 7. Once set, remove from the fridge/freezer and slice into 8-10 bars.
- 8. Melt the chocolate and drizzle it on top, allowing it to set quickly.
