Ingredients

  • cups packed dates (pitted)
  • ½ cup natural peanut butter
  • ½ cup rolled oats

Instructions

  1. If the dates are not sticky, soak them in warm water for 10 minutes and drain.
  2. Pulse the dates in a food processor until they form small bits and clump together.
  3. Add the peanut butter and oats to the food processor and pulse until combined.
  4. Transfer the mixture to a parchment-lined 8x8 dish and press down to flatten, or roll into balls.
  5. If making bars, slice into 8-10 pieces and store in the fridge or freezer.
