Ingredients

  • ¾ cup gluten-free rolled oats, ground into a flour
  • 1 cup water
  • ¾ cup packed pitted Medjool dates
  • ½ cup chia seeds
  • ¼ cup raw sunflower seeds
  • ¼ cup raw pumpkin seeds
  • ¼ cup dried cranberries, finely chopped
  • 1 teaspoon cinnamon
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon fine grain sea salt

Instructions

  1. 1. Preheat the oven to 325°F and line a 9-inch square pan with parchment paper.
  2. 2. Blend the rolled oats in a high-speed blender until a fine flour forms.
  3. 3. In a separate bowl, combine the oat flour with the water and pitted dates, blending until smooth after soaking the dates if necessary.
  4. 4. Mix all ingredients in the bowl with the oat flour until well combined.
  5. 5. Spread the mixture evenly in the prepared pan using a spatula or wet hands.
  6. 6. Bake for 23-25 minutes until firm to the touch.
  7. 7. Allow to cool in the pan for 5 minutes, then transfer to a cooling rack for another 5-10 minutes before slicing.
