Soft Oat and Nut Bars

Instructions
- Preheat the oven to 375°F.
- In a medium bowl, combine oats, flour, baking powder, salt, and cinnamon.
- In a large bowl, cream together brown sugar and butter until light and creamy.
- Add the egg and vanilla extract, and beat until well combined.
- Mix in half of the oat mixture, then add soy milk and beat until smooth.
- Add the remaining oat mixture and mix until just combined.
- Fold in the chopped walnuts and shredded coconut.
- Pour the batter into a greased 9x9 inch casserole dish and bake for 30 minutes.
- Allow to cool before cutting into 9 pieces.
