Ingredients

The base

  • cups old-fashioned rolled oats
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tsp cinnamon

The wet ingredients

  • cup brown sugar
  • ¼ cup room temperature butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup plain or vanilla soy milk

The mix-ins

  • cup chopped walnuts
  • cup sweetened shredded coconut

Instructions

  1. Preheat the oven to 375°F.
  2. In a medium bowl, combine oats, flour, baking powder, salt, and cinnamon.
  3. In a large bowl, cream together brown sugar and butter until light and creamy.
  4. Add the egg and vanilla extract, and beat until well combined.
  5. Mix in half of the oat mixture, then add soy milk and beat until smooth.
  6. Add the remaining oat mixture and mix until just combined.
  7. Fold in the chopped walnuts and shredded coconut.
  8. Pour the batter into a greased 9x9 inch casserole dish and bake for 30 minutes.
  9. Allow to cool before cutting into 9 pieces.
