Apple Oatmeal Bars

Ingredients

The base

  • 1 cup oat flour
  • 1 ½ cups old-fashioned oats
  • 1 tsp cinnamon
  • a pinch nutmeg
  • ¼ tsp salt
  • ¼ tsp baking soda

The wet ingredients

  • ½ cup unsweetened applesauce
  • ¼ cup coconut oil, melted
  • ¼ cup pure maple syrup
  • 1 medium apple, diced
  • ½ cup apple butter

Instructions

  1. Preheat the oven to 325°F and grease an 8x8 inch baking dish.
  2. In a large bowl, combine the oats, oat flour, cinnamon, nutmeg, and baking soda.
  3. Add the applesauce, maple syrup, coconut oil, and diced apple to the dry ingredients and stir until combined.
  4. Set aside a heaping half cup of the oat mixture, then press the remaining mixture evenly into the prepared pan.
  5. Spread the apple butter evenly over the mixture and sprinkle the reserved oat mixture on top.
  6. Bake for 30 minutes.
  7. Allow to cool completely on a wire rack before cutting into 12-16 bars and store in the refrigerator.
