Ingredients

The base

  • 1 cup old-fashioned oats
  • cup ground flaxseed
  • cup unsweetened shredded coconut
  • 3 scoops (81g) vanilla plant-based protein powder

The binding ingredients

  • ½ cup almond butter
  • ¼ cup pure maple syrup
  • 1 tbsp almond milk
  • 1 tbsp vanilla extract

The mix-ins

  • cup dried cherries or cranberries

Instructions

  1. Line a loaf pan with parchment paper or prepare to roll the mixture into balls.
  2. Blend the oats, ground flax, coconut, and protein powder until powdery.
  3. Combine the dry mixture with almond butter, maple syrup, almond milk, and vanilla in a bowl, mixing well.
  4. Fold in the dried cherries.
  5. Press the mixture into the lined loaf pan until flat and smooth.
  6. Freeze for at least 30 minutes before slicing into bars.
  7. Store in the fridge or freezer.
