Ingredients

The bars

  • 1 ¾ cups oat flour
  • ½ cup vanilla plant protein powder
  • 2 tbsp matcha green tea powder
  • ¼ tsp fine sea salt
  • cup pure maple syrup
  • ½ cup cashew butter
  • ¼ cup almond milk
  • 1 tsp vanilla extract

The chocolate coating

  • ½ cup chocolate chips
  • 1 tbsp coconut oil
  • 1 tbsp cashew butter
  • to taste flaky sea salt

Instructions

  1. Line an 8×8 inch square baking dish with parchment paper.
  2. In a large bowl, mix oat flour, protein powder, matcha, and salt.
  3. Add maple syrup, cashew butter, almond milk, and vanilla, and stir until a dough forms.
  4. Press the mixture evenly into the prepared baking dish.
  5. For the chocolate coating, melt chocolate chips, coconut oil, and cashew butter in a microwave-safe bowl.
  6. Pour the melted chocolate over the bars and spread evenly.
  7. Freeze for at least 2 hours before slicing into 12 bars and topping with sea salt.
