Ingredients

The bars

  • cups oat flour
  • ½ cup vanilla protein powder
  • ¼ tsp fine sea salt
  • ¼ tsp baking soda
  • cup pure maple syrup
  • ½ cup cashew butter
  • ¼ cup almond milk
  • 1 tsp vanilla extract

The chocolate topping

  • ½ cup chocolate chips
  • 2 tbsp cashew butter
  • 1 tbsp coconut oil
  • to taste sea salt

Instructions

  1. Line an 8x8 inch baking dish with parchment paper.
  2. In a large bowl, whisk together oat flour, protein powder, salt, and baking soda.
  3. Add maple syrup, cashew butter, almond milk, and vanilla to the dry ingredients and mix until a dough forms.
  4. Press the dough evenly into the prepared baking dish.
  5. Melt chocolate chips, coconut oil, and cashew butter in a microwave-safe bowl, stirring until smooth.
  6. Pour the melted chocolate over the bars and spread evenly.
  7. Freeze for at least 2 hours before slicing into 9 bars and sprinkle with sea salt.
