Ingredients

The base

  • cups Cashew Butter
  • ¼ cup Maple Syrup
  • ½ teaspoon Vanilla Extract
  • teaspoon Baking Soda
  • ¾ cup Unsweetened Protein Powder
  • ¾ teaspoon Salt
  • cups Mini Chocolate Chips

The topping

  • 1 teaspoon Coconut Oil

Instructions

  1. Line an 8×8 square pan with parchment paper, greasing the inside first.
  2. In a large bowl, mix together all ingredients, including ½ cup of chocolate chips.
  3. Transfer the dough into the pan and press down evenly.
  4. Melt ¾ cup chocolate chips with coconut oil in the microwave in 2, 30-second increments until smooth.
  5. Pour the melted chocolate over the bars.
  6. Refrigerate for 3 hours, then slice into 12 bars.
  7. Store in the refrigerator for up to 1 week.
