Instructions
- 1. Preheat the oven to 350°F (175°C).
- 2. Grease an 8x8 baking dish with cooking spray or coconut oil.
- 3. In a small bowl, combine chia seeds and water, letting it sit for 5 minutes to thicken.
- 4. In a large bowl, mix together cashew butter, chia egg mixture, maple syrup, coconut flour, vanilla extract, baking soda, and kosher salt until well combined.
- 5. Gently fold in the chocolate chips.
- 6. Transfer the batter to the greased baking dish and spread it evenly.
- 7. Bake for 30 minutes or until set and lightly browned.
- 8. Allow to cool completely before cutting into squares.
