Ingredients

The base

  • 1 Tbsp flaxseed meal
  • 2 ½ Tbsp water
  • ¾ cup packed brown sugar
  • ½ cup melted vegan butter
  • 1 tsp vanilla extract

The dry ingredients

  • 1 ⅓ cup gluten-free flour blend
  • ¾ tsp baking powder
  • ½ tsp sea salt

The mix-ins

  • ½ cup semi-sweet chocolate chips or chunks
  • ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (176°C) and line an 8x8-inch baking pan with parchment paper.
  2. In a medium mixing bowl, combine flaxseed meal and water, letting it rest for 5 minutes to thicken.
  3. Add brown sugar, melted vegan butter, and vanilla to the bowl and whisk until well combined.
  4. Fold in the gluten-free flour blend, baking powder, and sea salt.
  5. Stir in the chocolate chips and optional walnuts until just combined.
  6. Pour the mixture into the prepared baking pan and bake for 25-28 minutes until the edges are golden brown.
  7. Allow to cool at room temperature for at least 20 minutes before slicing into bars.
