Ingredients

The base

  • 1 ½ cups raw cashews
  • 1 cup tightly packed pitted Medjool dates
  • 1 teaspoon pure vanilla extract
  • 1 to 2 teaspoons water (if needed)
  • ¼ plus ⅛ teaspoon fine sea salt

The mix-ins

  • 3 tablespoons mini non-dairy chocolate chips

Instructions

  1. Process the cashews in a food processor for a few seconds until coarse.
  2. Add pitted dates and vanilla, then process until the mixture comes together.
  3. If the mixture is crumbly, add water gradually and process again.
  4. Add salt and chocolate chips, and process briefly to combine.
  5. Line a loaf pan or square pan with parchment paper, then scoop the mixture into the pan.
  6. Press down firmly to pack the mixture evenly.
  7. Freeze for at least 15 to 20 minutes, then slice into bars.
  8. Wrap bars for storage in the fridge or freezer.
