Chocolate Chip Cookie Dough Energy Bars

Instructions
- Process the cashews in a food processor for a few seconds until coarse.
- Add pitted dates and vanilla, then process until the mixture comes together.
- If the mixture is crumbly, add water gradually and process again.
- Add salt and chocolate chips, and process briefly to combine.
- Line a loaf pan or square pan with parchment paper, then scoop the mixture into the pan.
- Press down firmly to pack the mixture evenly.
- Freeze for at least 15 to 20 minutes, then slice into bars.
- Wrap bars for storage in the fridge or freezer.
