Ingredients

Cookie Dough

  • 12 pieces dates, pitted
  • 1 Tbsp water
  • 1 tsp vanilla extract
  • ¼ cup macadamia nut butter
  • ¼ cup almond butter
  • ½ cup oat flour
  • ½ cup soy protein powder
  • ¼ tsp salt
  • ¼ cup coconut milk
  • cup milk of choice
  • cup chocolate chips

Topping

  • cup chocolate chips, melted

Instructions

  1. Soak the dates in hot water for about an hour or in the fridge for at least 4 hours or overnight.
  2. Line the bottom of a 9"X5" loaf pan with parchment paper.
  3. Drain the dates, saving 1 Tbsp of the soaking water, and blend with water and vanilla extract until smooth.
  4. Add the nut butters, oat flour, protein powder, and salt to the blender and pulse a few times.
  5. Blend in the milks until the mixture is a thick, smooth dough.
  6. Transfer the dough to a bowl and fold in the chocolate chips.
  7. Press the dough into the prepared pan and freeze for about an hour.
  8. Prepare the ganache topping if using, or melt the chocolate chips for the topping.
  9. Spread the ganache or melted chocolate on the chilled dough.
  10. Refrigerate for about 10 minutes to set the topping.
  11. Remove from the pan and slice into squares.
