No Bake Chocolate Chip Cookie Dough Bars

Instructions
- Soak the dates in hot water for about an hour or in the fridge for at least 4 hours or overnight.
- Line the bottom of a 9"X5" loaf pan with parchment paper.
- Drain the dates, saving 1 Tbsp of the soaking water, and blend with water and vanilla extract until smooth.
- Add the nut butters, oat flour, protein powder, and salt to the blender and pulse a few times.
- Blend in the milks until the mixture is a thick, smooth dough.
- Transfer the dough to a bowl and fold in the chocolate chips.
- Press the dough into the prepared pan and freeze for about an hour.
- Prepare the ganache topping if using, or melt the chocolate chips for the topping.
- Spread the ganache or melted chocolate on the chilled dough.
- Refrigerate for about 10 minutes to set the topping.
- Remove from the pan and slice into squares.
