No Bake Chocolate Chip Cookie Dough Bars

Instructions
- Soak the dates in hot water for about an hour or in the fridge for at least 4 hours or overnight.
- Line the bottom of a 9"x5" loaf pan with parchment paper.
- If needed, make your nut butters and oat flour.
- Drain the dates, saving 1 Tbsp of the water, and blend with the water and vanilla extract until smooth.
- Add the nut butters, oat flour, protein powder, and salt to the blender and pulse a few times.
- Blend in the milks until you achieve a thick, smooth dough consistency.
- Transfer the dough to a bowl and fold in the chocolate chips.
- Spoon the dough into the prepared pan and press it out evenly.
- Freeze the dough for about an hour to firm it up.
- Prepare the ganache topping or melt additional chocolate chips as desired.
- Spread the ganache or melted chocolate over the cookie dough.
- Chill in the fridge for about 10 minutes to set the topping.
- Remove from the pan and slice into squares.
