Ingredients

Cookie Dough

  • 12 pieces dates, pitted
  • 1 Tbsp water
  • 1 tsp vanilla extract
  • ¼ cup macadamia nut butter
  • ¼ cup almond butter
  • ½ cup oat flour
  • ½ cup soy protein powder (or brown rice protein powder)
  • ¼ tsp salt
  • ¼ cup coconut milk
  • cup milk of choice
  • cup chocolate chips

Topping

  • cup chocolate chips, melted

Instructions

  1. Soak the dates in hot water for about an hour or in the fridge for at least 4 hours or overnight.
  2. Line the bottom of a 9"x5" loaf pan with parchment paper.
  3. If needed, make your nut butters and oat flour.
  4. Drain the dates, saving 1 Tbsp of the water, and blend with the water and vanilla extract until smooth.
  5. Add the nut butters, oat flour, protein powder, and salt to the blender and pulse a few times.
  6. Blend in the milks until you achieve a thick, smooth dough consistency.
  7. Transfer the dough to a bowl and fold in the chocolate chips.
  8. Spoon the dough into the prepared pan and press it out evenly.
  9. Freeze the dough for about an hour to firm it up.
  10. Prepare the ganache topping or melt additional chocolate chips as desired.
  11. Spread the ganache or melted chocolate over the cookie dough.
  12. Chill in the fridge for about 10 minutes to set the topping.
  13. Remove from the pan and slice into squares.
