No-Bake Cookie Bars

Instructions
- Whisk together almond butter, maple syrup, vanilla, and salt in a bowl until smooth.
- Toast the oats in a skillet over low heat until golden and fragrant, about 8-12 minutes.
- Toast the almonds in the same skillet until golden, about 4-6 minutes.
- Combine the toasted oats, almonds, dried cherries, chia seeds, and cacao nibs in the bowl and mix well.
- Line an 8-inch square pan with parchment paper and pack the mixture firmly into the pan.
- Melt coconut oil and chocolate in a saucepan over low heat, stirring until smooth.
- Pour the melted chocolate over the packed mixture and sprinkle with flaky salt, cacao nibs, and chia seeds.
- Chill the bars until firm, at least 2 hours.
- Lift the bars out of the pan using the parchment paper and cut into 16 squares.
