Ingredients

The bars

  • 1 cup smooth unsalted almond butter
  • ½ cup maple syrup
  • 2 teaspoons vanilla extract
  • ¼ teaspoon fine sea salt
  • cups certified GF old fashioned rolled oats
  • ½ cup sliced almonds
  • ½ cup dried tart cherries
  • ¼ cup hulled hemp seeds
  • ¼ cup cacao nibs

The topping

  • 1 tablespoon extra-virgin coconut oil
  • ¾ cup chopped bittersweet chocolate
  • to taste flaky sea salt
  • to taste cacao nibs
  • to taste hemp seeds

Instructions

  1. Mix almond butter, maple syrup, vanilla, and salt in a bowl until smooth.
  2. Toast the oats in a skillet over low heat until golden and fragrant, then add to the almond butter mixture.
  3. Toast the sliced almonds in the skillet until golden, then add to the oat mixture along with cherries, hemp seeds, and cacao nibs.
  4. Combine all ingredients thoroughly, using hands if necessary.
  5. Line an 8-inch square pan with parchment paper and press the mixture evenly into the pan.
  6. Melt coconut oil and chocolate in a saucepan over low heat, then pour over the oat mixture and spread evenly.
  7. Sprinkle with flaky sea salt, cacao nibs, and hemp seeds.
  8. Refrigerate for at least 2 hours before cutting into 16 squares.
