Toasted Almond and Chocolate Protein Bars

Ingredients

The base

  • 1 cup all natural toasted almond butter
  • ½ cup coconut butter
  • ½ cup date paste
  • ¼ tsp Himalayan salt
  • 6-8 tbsp hot water

The protein and flavor

  • 250 g New Zealand Whey Protein Isolate
  • ¼ cup organic cacao powder
  • 2-3 tbsp hot water

Toppings

  • ¼ cup chopped raw almonds, toasted
  • 50 g cacao paste, finely chopped
  • 1 tbsp coconut oil
  • 1 tbsp raw honey
  • 1 tbsp organic toasted unsweetened coconut flakes

Instructions

  1. Grease a loaf pan with coconut oil and line it with parchment paper.
  2. Mix almond butter, coconut butter, date paste, and salt in a stand mixer until well combined.
  3. Add hot water gradually until the mixture becomes sticky and smooth.
  4. Incorporate whey protein and cacao powder on low speed until crumbly.
  5. Add more hot water until the mixture is thick and sticky.
  6. Transfer the mixture to the prepared pan and smooth the top.
  7. Cover and refrigerate overnight.
  8. Once chilled, cut into 8 bars and place them on parchment paper.
  9. Sprinkle toasted almonds on top and press them down.
  10. Melt cacao paste, coconut oil, and honey in the microwave and mix until smooth.
  11. Spoon melted chocolate over the bars and sprinkle with coconut flakes.
  12. Return to the fridge until fully set, about an hour.
  13. Wrap bars individually and store in the refrigerator or freeze.
