Ingredients

  • 2–½ cups raw almonds
  • ½ cup unsweetened coconut flakes
  • ¼ cup dried mango
  • ¼ cup protein powder
  • 1 teaspoon cinnamon
  • pinch sea salt
  • ⅓ to ½ cup honey or maple syrup
  • ⅓ to ½ cup hot water
  • 1 teaspoon pure vanilla extract

Instructions

  1. Blend the almonds and coconut until a meal-like texture is formed.
  2. Set the mixture aside and grind the dried mango into smaller pieces.
  3. Mix the ground mango with the almond-coconut mixture, then stir in protein powder, cinnamon, and salt.
  4. In a separate bowl, combine honey or maple syrup, hot water, and vanilla extract, then mix with the dry ingredients.
  5. Adjust the consistency as needed, then press the mixture into a lined baking dish.
  6. Refrigerate for at least 1 hour, then cut into bars.
