Ingredients

  • cup chocolate chips
  • 1 cup Medjool dates (about 7 large dates)
  • 1 cup walnuts
  • cup coconut flour
  • 1 tbsp water (if needed)

Instructions

  1. Chop the chocolate chips in a food processor for about 20 seconds and set aside.
  2. Remove the pits from the dates and add them to the food processor with walnuts and coconut flour, processing for 20 seconds.
  3. Add the chopped chocolate back in and process for an additional 10 seconds.
  4. Check the mixture for consistency; if it's crumbly, add water gradually until it binds together like cookie dough.
  5. Transfer the mixture to a medium loaf pan and refrigerate for an hour.
  6. Cut into bars or squares and store in an airtight container in the refrigerator or freeze.
