Ingredients

The base

  • ¾ cup creamy peanut butter
  • cup honey
  • 2 tablespoons coconut oil
  • 2 cups old fashioned rolled oats
  • ½ cup vanilla protein powder
  • 3 tablespoons flaxseed meal
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt

The mix-ins

  • cup mini chocolate chips

Instructions

  1. Line an 8x8 or 9x9 inch baking pan with parchment paper.
  2. Melt the peanut butter, honey, and coconut oil in a double boiler until smooth.
  3. Remove from heat and mix in the oats, protein powder, flaxseed, cinnamon, and salt until combined.
  4. Fold in the chocolate chips, cooling the mixture if necessary to prevent melting.
  5. Press the mixture evenly into the prepared pan and refrigerate for 1 hour until firm.
  6. Lift the bars from the pan and slice them into desired portions.
