Ingredients

  • 1 cup creamy peanut butter
  • ¾ cup light brown sugar
  • ½ teaspoon baking soda
  • teaspoon kosher salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup semi-sweet chocolate chips
  • cup old fashioned rolled oats

Instructions

  1. Preheat the oven to 350°F and line an 8x8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine peanut butter, brown sugar, baking soda, and salt until well mixed.
  3. Add the egg and vanilla extract, mixing until incorporated.
  4. Stir in the chocolate chips and oats by hand.
  5. Press the mixture into the prepared baking pan.
  6. Bake for 22 minutes until golden and set.
  7. Allow to cool completely, then slice and serve.
