Ingredients

The base

  • 1 ¼ cups gluten free flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 cups rolled oats
  • 2 large eggs

The wet ingredients

  • ½ cup pure maple syrup
  • ¼ cup coconut milk
  • ½ cup natural peanut butter
  • cup melted coconut oil

The mix-ins

  • ¾ cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F and grease a 9×13 inch pan.
  2. In a small bowl, whisk together the flour, baking powder, and salt, then stir in the oats.
  3. In a stand mixer, combine the eggs, maple syrup, coconut milk, peanut butter, and melted coconut oil.
  4. Add the dry ingredients to the wet mixture and mix until combined, then stir in the chocolate chips.
  5. Transfer the batter to the prepared baking pan and press down evenly.
  6. Bake for about 25 minutes until the top is set and the edges are lightly browned.
  7. Allow to cool completely on a wire rack before cutting into 14 bars.
