Instructions
- Preheat the oven to 350°F and grease a 9×13 inch pan.
- In a small bowl, whisk together the flour, baking powder, and salt, then stir in the oats.
- In a stand mixer, combine the eggs, maple syrup, coconut milk, peanut butter, and melted coconut oil.
- Add the dry ingredients to the wet mixture and mix until combined, then stir in the chocolate chips.
- Transfer the batter to the prepared baking pan and press down evenly.
- Bake for about 25 minutes until the top is set and the edges are lightly browned.
- Allow to cool completely on a wire rack before cutting into 14 bars.
