Ingredients

The bars

  • ¾ cup whole wheat flour
  • ¼ cup all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter
  • 1 cup creamy peanut butter
  • 1 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup old fashioned oats

The frosting

  • ½ cup unsalted butter
  • cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F and grease a 9x13 baking pan.
  2. In a medium bowl, whisk together the flours, baking soda, and salt.
  3. In a stand mixer, cream the butter, peanut butter, and brown sugar until smooth, then add the egg and vanilla extract.
  4. Slowly mix in the flour mixture and stir in the oats.
  5. Press the dough into the prepared pan and bake for 12-14 minutes until golden brown.
  6. Allow the bars to cool completely.
  7. For the frosting, beat the butter and cocoa until smooth, then alternately add powdered sugar and milk until creamy.
  8. Frost the cooled bars, cut into squares, and serve.
