Instructions
- Preheat the oven to 350°F and butter a rimmed 18 by 13-inch cookie sheet.
- Whisk together the flour, oats, baking soda, and salt in a mixing bowl.
- In an electric mixer, cream together the butter, brown sugar, and granulated sugar until creamy.
- Mix in the eggs one at a time, then blend in the peanut butter and vanilla.
- Slowly add the dry ingredients to the mixer and mix until just combined.
- Spread the cookie dough onto the prepared baking sheet.
- Bake in the preheated oven for 13 to 15 minutes until nearly set.
- Remove from the oven and cool for 5 minutes, then dollop the remaining peanut butter over the top and spread it evenly.
- Melt the butter in a saucepan, stir in cocoa, milk, and salt, and bring to a boil.
- Remove from heat, whisk in vanilla, then stir in powdered sugar until well combined.
- Pour the frosting over the bars and spread evenly, then allow to set before cutting into squares.
