Ingredients

The base

  • 2 cups all-purpose flour
  • 2 cups quick oats
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 cup unsalted butter, softened
  • cups packed light-brown sugar
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 cup creamy peanut butter
  • 1 tsp vanilla extract

The frosting

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter, diced into 1 Tbsp pieces
  • ¼ cup unsweetened cocoa powder
  • ¼ cup milk
  • 2 pinches salt
  • 1 tsp vanilla extract
  • 3 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F and butter a rimmed 18 by 13-inch cookie sheet.
  2. Whisk together the flour, oats, baking soda, and salt in a mixing bowl.
  3. In an electric mixer, cream together the butter, brown sugar, and granulated sugar until creamy.
  4. Mix in the eggs one at a time, then blend in the peanut butter and vanilla.
  5. Slowly add the dry ingredients to the mixer and mix until just combined.
  6. Spread the cookie dough onto the prepared baking sheet.
  7. Bake in the preheated oven for 13 to 15 minutes until nearly set.
  8. Remove from the oven and cool for 5 minutes, then dollop the remaining peanut butter over the top and spread it evenly.
  9. Melt the butter in a saucepan, stir in cocoa, milk, and salt, and bring to a boil.
  10. Remove from heat, whisk in vanilla, then stir in powdered sugar until well combined.
  11. Pour the frosting over the bars and spread evenly, then allow to set before cutting into squares.
