Peanut Butter and Jelly Bars

Ingredients

  • 1 ¼ cup all-purpose flour
  • 1 cup rolled oats
  • ¼ tsp baking soda
  • ½ cup salted butter, room temperature
  • ½ cup brown sugar
  • 1 extra large egg
  • ½ cup natural peanut butter
  • ½ tsp vanilla extract
  • ¾ cup jam or jelly
  • ¼ cup peanuts

Instructions

  1. Preheat the oven to 350ºF and line an 8×8 inch baking dish with parchment or foil.
  2. In a medium bowl, mix together the flour, oats, and baking soda.
  3. In a separate bowl, cream the butter and brown sugar until smooth.
  4. Add the egg, peanut butter, and vanilla to the butter mixture and mix until smooth.
  5. Combine the flour mixture with the peanut butter mixture and stir until a thick dough forms.
  6. Press ¾ of the dough into the bottom of the prepared baking dish evenly.
  7. Spread the jam over the cookie dough layer.
  8. Crumble the remaining dough over the jam and sprinkle peanuts on top, pressing them in gently.
  9. Bake for 35-40 minutes until the top is golden brown.
  10. Let cool slightly, lift out of the dish using the parchment, and cut into 12 pieces.
