Peanut Butter and Jelly Bars

Instructions
- Preheat the oven to 350ºF and line an 8×8 inch baking dish with parchment or foil.
- In a medium bowl, mix together the flour, oats, and baking soda.
- In a separate bowl, cream the butter and brown sugar until smooth.
- Add the egg, peanut butter, and vanilla to the butter mixture and mix until smooth.
- Combine the flour mixture with the peanut butter mixture and stir until a thick dough forms.
- Press ¾ of the dough into the bottom of the prepared baking dish evenly.
- Spread the jam over the cookie dough layer.
- Crumble the remaining dough over the jam and sprinkle peanuts on top, pressing them in gently.
- Bake for 35-40 minutes until the top is golden brown.
- Let cool slightly, lift out of the dish using the parchment, and cut into 12 pieces.
