Instructions
- Preheat the oven to 350°F and prepare an 8x8-inch baking pan with nonstick spray and parchment paper.
- In a mixing bowl, cream together the butter, Greek yogurt, and sugar until fluffy.
- Add the vanilla, egg, and peanut butter, mixing until well combined.
- In a separate bowl, mix the flours, baking powder, and salt, then gradually add to the peanut butter mixture until just combined.
- Spread two-thirds of the dough into the prepared pan, then layer with jam and top with remaining dough and chopped peanuts.
- Bake for 35 to 40 minutes until golden brown, then cool before slicing.
