Ingredients

The cookie base

  • ¼ cup unsalted butter at room temperature
  • ¼ cup nonfat plain Greek yogurt
  • cup sugar
  • 1 teaspoon pure vanilla extract
  • 1 large egg at room temperature
  • 1 cup creamy peanut butter
  • ¾ cup white whole wheat flour
  • ¾ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt

The filling and topping

  • 1 cup strawberry jam or raspberry jam or other jam
  • cup salted peanuts coarsely chopped

Instructions

  1. Preheat the oven to 350°F and prepare an 8x8-inch baking pan with nonstick spray and parchment paper.
  2. In a mixing bowl, cream together the butter, Greek yogurt, and sugar until fluffy.
  3. Add the vanilla, egg, and peanut butter, mixing until well combined.
  4. In a separate bowl, mix the flours, baking powder, and salt, then gradually add to the peanut butter mixture until just combined.
  5. Spread two-thirds of the dough into the prepared pan, then layer with jam and top with remaining dough and chopped peanuts.
  6. Bake for 35 to 40 minutes until golden brown, then cool before slicing.
