Ingredients

Peanut Butter Dough

  • ½ cup natural peanut butter
  • ¼ cup honey
  • 1 cup rolled oats
  • ¼ cup flaxseed meal
  • ¼ cup powdered peanut butter (optional)
  • ¼ tsp salt

Jelly Filling

  • 1 cup fruit of choice
  • 2 Tbsp chia seeds
  • 1-2 Tbsp water

Instructions

  1. Grease and/or line a 9"X5" loaf pan with parchment paper.
  2. In a medium saucepan, combine peanut butter and honey over medium heat, stirring until smooth.
  3. In a separate bowl, mix oats, flaxseed meal, powdered peanut butter (if using), and salt.
  4. Once the peanut butter mixture is smooth, add the dry ingredients and stir until combined.
  5. Press ¾ of the mixture into the bottom of the prepared loaf pan and refrigerate to set.
  6. In the same saucepan, add fruit, chia seeds, and water, stirring until the mixture thickens.
  7. Spread the jelly evenly over the set dough in the loaf pan.
  8. Crumble the remaining dough on top of the jelly.
  9. Refrigerate for at least 1 hour until the bars are set, then slice and serve.
