Healthy Peanut Butter and Jelly Bars

Instructions
- Grease and/or line a 9"X5" loaf pan with parchment paper.
- In a medium saucepan, combine peanut butter and honey over medium heat, stirring until smooth.
- In a separate bowl, mix oats, flaxseed meal, powdered peanut butter (if using), and salt.
- Once the peanut butter mixture is smooth, add the dry ingredients and stir until combined.
- Press ¾ of the mixture into the bottom of the prepared loaf pan and refrigerate to set.
- In the same saucepan, add fruit, chia seeds, and water, stirring until the mixture thickens.
- Spread the jelly evenly over the set dough in the loaf pan.
- Crumble the remaining dough on top of the jelly.
- Refrigerate for at least 1 hour until the bars are set, then slice and serve.
