Ingredients

Peanut Butter Dough

  • ½ cup natural peanut butter
  • ¼ cup honey (or agave/maple syrup)
  • 1 cup rolled oats
  • ¼ cup flaxseed meal
  • ¼ cup powdered peanut butter (optional)
  • ¼ tsp salt

Jelly Filling

  • 1 cup fruit of choice (e.g., blueberries, cherries, raspberries)
  • 2 Tbsp chia seeds
  • 1-2 Tbsp water

Instructions

  1. Grease or line a 9"X5" loaf pan with parchment paper.
  2. In a medium saucepan, combine peanut butter and honey over medium heat, stirring until smooth.
  3. In a separate bowl, mix rolled oats, flaxseed meal, powdered peanut butter (if using), and salt.
  4. Once the peanut butter mixture is smooth, add the dry ingredients and stir until fully combined.
  5. Press ¾ of the peanut butter mixture into the bottom of the prepared loaf pan and refrigerate to set.
  6. In the same saucepan, add fruit, chia seeds, and the appropriate amount of water, stirring occasionally until thickened.
  7. Spread the jelly evenly over the set dough in the loaf pan.
  8. Crumble the remaining dough on top of the jelly.
  9. Return the pan to the refrigerator for at least 1 hour to set.
  10. Slice and enjoy your peanut butter and jelly bars.
